If you're a fan of coffee and chocolate, you've got to try these Chocolate Latte Roll-Out Cookies! They pack a rich chocolate punch with just a whisper of espresso, perfect for when you want something a little fancier than your usual chocolate sugar cookies. And when you add that vanilla royal icing? It's like a warm, cozy hug in cookie form.
Ingredients:
1 cup (2 sticks) butter, softened
1 cup granulated sugar
1 large egg
1 tablespoon vanilla extract
1 teaspoon coffee emulsion
2 teaspoons espresso powder
1/2 cup cocoa powder
¼ cup cornstarch
½ teaspoon baking powder
2½–3 cups all-purpose flour
Instructions
- Cream the butter and sugar. In the bowl of a stand mixer, beat the softened butter and sugar together until light and creamy.
- Add the wet ingredients. Mix in the egg, vanilla extract, and coffee emulsion until fully incorporated.
- Mix in the espresso powder and cocoa powder. The dough will become beautifully rich and chocolatey.
- Add the dry ingredients. Add the cornstarch and baking powder, then gradually add the flour. Start with 2½ cups and add additional flour as needed until you have a soft dough that is easy to work with and holds its shape.
- Chill the dough. Wrap the dough and refrigerate until firm enough to roll and cut.
- Roll and cut. Roll the dough to your preferred thickness on a lightly floured surface. Cut into your favorite shapes and place them onto a parchment-lined baking sheet bake and enjoy!
Notes: You don't have to chill this dough. You can dive right in, roll it out, and get those cookies in the oven. But, oh boy, letting it chill for a day? Even just a few hours if you are in a hurry.
