Chocolate Latte Roll Out Cookies

Chocolate Latte Roll Out Cookies

If you're a fan of coffee and chocolate, you've got to try these Chocolate Latte Roll-Out Cookies! They pack a rich chocolate punch with just a whisper of espresso, perfect for when you want something a little fancier than your usual chocolate sugar cookies. And when you add that vanilla royal icing? It's like a warm, cozy hug in cookie form.

Ingredients:

1 cup (2 sticks) butter, softened

1 cup granulated sugar

1 large egg

1 tablespoon vanilla extract

1 teaspoon coffee emulsion

2 teaspoons espresso powder

1/2 cup cocoa powder

¼ cup cornstarch

½ teaspoon baking powder

2½–3 cups all-purpose flour

Instructions

  1. Cream the butter and sugar. In the bowl of a stand mixer, beat the softened butter and sugar together until light and creamy.
  2. Add the wet ingredients. Mix in the egg, vanilla extract, and coffee emulsion until fully incorporated.
  3.  Mix in the espresso powder and cocoa powder. The dough will become beautifully rich and chocolatey.
  4.  Add the dry ingredients. Add the cornstarch and baking powder, then gradually add the flour. Start with 2½ cups and add additional flour as needed until you have a soft dough that is easy to work with and holds its shape.
  5. Chill the dough. Wrap the dough and refrigerate until firm enough to roll and cut.
  6.  Roll and cut. Roll the dough to your preferred thickness on a lightly floured surface. Cut into your favorite shapes and place them onto a parchment-lined baking sheet bake and enjoy!

Notes: You don't have to chill this dough. You can dive right in, roll it out, and get those cookies in the oven. But, oh boy, letting it chill for a day? Even just a few hours if you are in a hurry. It's like giving all those flavors a chance to mingle and fall in love. Trust me, the taste gets even more amazing!
